Wine in the preparation
400 ml simple dry red wine to poach the fruit.
Replace with 400 ml red grape juice and use only 20 g sugar. Cooking does not guarantee removal of all alcohol.
Ingredients
- 4 firm but ripe pears
- 400 ml simple dry red wine, 200 ml water
- 60 g sugar, 1 cinnamon stick, zest of ½ orange
Steps
- Choose a narrow saucepan that fits the pears upright. Peel them, leaving the stalks.
- Heat wine, water, sugar, cinnamon and zest, then add the pears. Simmer for 20–30 minutes, turning regularly, until a knife enters easily.
- Remove the pears. Reduce the liquid for 5 minutes, then spoon a little syrup over each pear. Serve warm or cold.
- Alcohol-free version: replace the 400 ml wine with red grape juice and reduce the sugar to 20 g.
Here wine is an ingredient in the dessert, not a recommendation to drink the same red with a sweet dish.
